Polka Dot Bikini Cocktail

Grenadine is great to have on hand at all times. It’s great for people who don’t drink in artisan caliber sodas or an amped up flavor in cocktails that don’t need just sugar and red dye. Grenadine isn’t a cherry flavor, its pomegranate! It is also ridiculously easy to make and stays fresh for about three weeks in a well-sealed bottle.

The Polka Dot Bikini is my take on a beach drink. With flavors of rum, pineapple, lemon, and grenadine it brings to mind toes in the sand. Around here, we have the added bonus of some glorious Star Wars inspired tiki mugs but really any sort of pint glass, large drinking glass or hurricane will work.

Grenadine

Makes about 3 cups

Ingredients

16 oz 100% pomegranate juice (Pom wonderful works great)

2½ cups sugar (I like to use demerara)

3 drops of orange blossom water or peels of 3 oranges in strips

Instructions

Heat pomegranate juice in saucepan over medium heat. When it begins to steam, add sugar and whisk until dissolved. Remove from heat and add orange blossom water or express oils from orange peels by twisting peels, orange part out, over the surface of the liquid. Funnel into a glass container with a tight fitting lid and store in the refrigerator for up to three weeks.

Polka Dot Bikini

Ingredients

Equipment: swizzle stick or cocktail spoon, glass that will hold 12-16 ounces

2½ oz rum (I like Rhum Barbancourt)

1½ oz pineapple juice

½ oz lemon

¼ oz simple syrup (1 part sugar, 1 part hot water)

½ oz grenadine

Wedge of pineapple or maraschino cherry or wedge of lemon for garnish

Instructions

Combine rum, pineapple juice, lemon juice, and simple syrup in glass with ice. Swizzle (stir glass while moving swizzle stick or cocktail spoon up and down) with stick or spoon. Top with ice and float grenadine. Garnish with lemon, pineapple, cherry or some combination of the three. Cheers!
