Last week we covered the classic French 75. This Agave 75 is a take on the same concept with earthy tequila instead of gin and agave instead of cane sugar. The addition of grapefruit bitters really brings all the flavors together.
Equipment: shaker, strainer, champagne flute
1 oz blanco tequila (Milagro is my favorite)
½ oz fresh lemon juice
¼ oz agave syrup (1 part agave nectar, 1 part hot water, whisked to dissolve)
3 dashes of grapefruit bitters (Scrappy’s is my favorite but Fee Brothers makes an excellent one as well)
Sparkling wine (I used Ruffino Prosecco)
Wedge of lemon and sugar for rimming
Wipe lemon juice around rim of champagne flute and dip into plate of sugar to coat and make a sugared rim. Combine tequila, lemon, agave syrup and bitters in shaker with ice. Shake for 10-15 seconds and strain into champagne flute and top with sparkling wine. Cheers!
