Liquid desserts are a great way to wrap up an evening. This one is an adult only version of Mexican chocolate. Infusing liquors is an easy and economical way to get more complex or intense flavors into a cocktail.
Equipment: funnel, bottle with tight fitting lid that will fit 750ml
750ml bottle of blanco tequila (something drinkable)
2 sticks of cinnamon
Place cinnamon sticks into bottle and combine with tequila (Funnels are your friend). Close lid and place the bottle in a cool dark place for 24-36 hours. Every couple hours, give the bottle a quick shake or swirl. When you are happy with the taste (I go the full 36 hours), discard the cinnamon sticks and re-bottle liquid. This won’t go bad so store for as long as there is any left!
Equipment: martini glass or coupe, shaker, strainer, microplane
2½ oz cinnamon tequila
1½ oz chocolate liqueur (Godiva makes a good one, as does Chopin)
1½ oz cream
¼ oz grenadine (homemade is always best)
Whole nutmeg and cinnamon stick for garnish (you’ll be microplaning this on top)
Combine tequila, chocolate liqueur, cream and grenadine in shaker with ice. Shake for 20 seconds and strain into chilled martini glass or coupe. Top with freshly grated cinnamon and nutmeg using microplane. Cheers!
