Tenderloin bites

Salty holds up the male end of the household by being a classic meat and potatoes guy, and his favorite snack is all about quality and simplicity. Whether you cheat like us or make the sauce from scratch, this dish is ready in less than 20 minutes, and also makes a great healthy meal if you throw it together with some rice or noodles and a steamed vegetable.


Serves 2-4 as appetizer, 1-2 as main meal 

8-10 oz. tenderloin tails Saucy Note: Tenderloin tails are the unattractive (i.e. cheaper) but equally delicious ends of the tenderloin, which is where all those fabulous but expensive filet mignons come from. Salty is bit particular about his steaks, so this is a good way to save money on really high quality meat that you’re going to cut up anyway. If tenderloin is outside your price range, then rib eye is slightly cheaper but also much fattier and requires about 30 seconds more cooking to render the fat (not that there’s anything wrong with that, it’s my favorite cut), or sirloin, which is leaner and will be a little chewier.

Ponzu Sauce Saucy Note: I keep a bottle of store bought Ponzu on hand for Salty to make his own snack, but it is also easy to whip up homemade ponzu in a few minutes. Any extra sauce can be stored in a jar for several days and makes a great marinade or salad dressing base.

1 lime, juiced

1 lemon, juiced

¼ cup rice vinegar

¾ cup soy sauce

¼ cup mirin

pinch of salt

2-3 drops chili sesame oil


Preheat broiler to high.

Cut steak into bite size pieces about one inch thick. Place in small bowl.

Mix the ponzu ingredients together if you’re making the sauce from scratch. Pour ponzu over beef in bowl and thoroughly mix. Let stand for at least 5 minutes, and up to twenty.

Arrange beef on a foil-lined broiler tray. Broil on one side for 90 seconds, and the other side for 30-50 seconds. Remove and serve immediately. Garnish with sesame seeds if desired.
